Broccoli and Sausage Quiche
1 lb. bulk sausage, browned and drained
2 C fresh broccoli, chopped and blanched or 1 10oz. box frozen broccoli
spears, drained and diced
1 small onion, peeled and diced
8 oz. cheddar cheese, grated
8 eggs
2 C milk
Salt and pepper to taste
2 9-inch pie crusts
Preheat oven to 350 degrees F.
Brown onions with sausage. Layer sausage-onion mixture, broccoli and
cheddar cheese equally in crusts.
Blend together eggs, milk, salt and pepper. Pour over sausage and
broccoli mixture in pie crusts. (Needs to cover ingredients; add another
egg and more milk if needed.)
Bake at 350 degrees for 30 to 35 minutes or until firmly set. Cut into 6
or 8 slices and serve hot.
Makes 2 quiches; serves 12 to 16.
