Shredded Romaine & Jicama Salad
1 small head Romaine lettuce, shredded
1 small jicama,
2 T orange juice
2 T cilantro
1/2 c nonfat yogurt
1 t paprika
1/2 t salt
Cut jicama into thin slices, then cut the slices into thin strips. Place lettuce and jicama in a salad bowl. Combine yogurt with remaining ingredients and pour over salad. Makes 4 servings.
