Wicked Good White Bean Dip

8 cloves garlic, peeled and halved 2 T. extra virgin olive oil 2 cans (15 oz. each) white beans, drained and rinsed 2 t. red wine vinegar 1/2 t. salt 1 T. chopped parsley, optional Carefully sauté the garlic in the olive oil in a pan over medium heat without browning it, about 10 to 15 minutes. Transfer the garlic oil to a food processor, add the beans, vinegar and salt and puree until the mixture is smooth. Spoon the mixture into a serving bowl, sprinkle with parsley and serve with crostini, toasted pita or crudités.
