Green Beans and Creamy Parmesan Dip

• Dip: • 1/4 c. + 1T light sour cream • 1/4 c. grated parmesan • 2 T. olive oil • 2 T. less-fat mayo • 1 1/2 t. cider vinegar • 1 t. soy sauce • 1/4 t. sugar. • • • 4 fresh green beans • 4 yellow wax beans cooked until crisp tender and cooled. Method: Process in mini food processor all dip ingredients until thick and creamy. Makes about 2/3 cup dip, about 3 servings. Can be refrigerated up to 3 days. Notes: Place 3 T. dip into small container w/ lid. Pack beans and dip in insulated lunch box w/ ice pack. Can be served with Lunch Box Pitzas, orange quarters and lemonade juice box.
