Zesty Meaty Con Queso Dip

1 lb. pasteurized processed cheese (Velveeta), cut up 1 can (10 oz.) Rotel Diced Tomatoes & Green Chilies, drained and reserve liquid 1/2 to 1 lb. ground beef, depending how meaty you want dip tortilla chips or French bread cubes In large skillet brown meat; pour off fat; set aside. Cut cheese into cubes. Put cheese and Rotel tomatoes and chilies into 2-quart microwave safe bowl and microwave on high for 6 to 8 minutes or until cheese is melted, stirring every 3 minutes. Stir in ground beef. Add a little of the reserved liquid from the Rotel tomatoes and green chilies to achieve desired consistency. Microwave for an additional 3 minutes or until thoroughly heated. Serve with tortilla chips or French bread cubes. Enjoy!
