Tzatziki (Cucumber Yogurt Dip)

3 cups plain yogurt 2 cloves garlic, minced 1 medium cucumber, peeled and grated 1-1/2 TB extra virgin olive oil Juice of 1/2 lemon Salt, to taste 3 TB fresh dill, chopped Mix all the ingredients together well. Cover and chill over night in the refrigerator. Serve with fresh veggies, crackers, party rye bread, or pita breads.
