Yogurt and Cucumber Dip

2 cloves garlic, minced Salt and ground black pepper, to taste 2 tsp. olive oil 1 tsp. red wine vinegar 8 oz. plain low fat yogurt 1/2 cucumber, peeled, seeded and grated Mix the garlic with the salt and pepper in a small bowl. Add the oil and vinegar and mix well. Place the yogurt in a serving bowl. Add the oil and vinegar mixture gradually, stirring gently each time. Fold in the grated cucumber and mix well. Chill before
