2 (14 ounce) cans black beans, drained
1 medium onion, finely diced
4 cloves garlic, minced
1 tablespoon ground cumin
1 teaspoon cayenne pepper
14 ounces fresh goat cheese crumbled or any other fresh farmer's cheese
1/4 cup green onions thinly sliced (reserve 1 tablespoon for garnish)
1/4 cup fresh cilantro chopped (reserve 1 tablespoon for garnish)
GARNISH:
reserved green onions
reserved cilantro
2 tablespoons pumpkin seeds, shelled and toasted
Combine all the ingredients in the crock pot slow cooker, except for
the garnish ingredients.
Cook on HIGH 1 1/2 to 2 1/2 hours or until the cheese has melted and
is bubbly.
Transfer to your serving dish and garnish the top with a sprinkling of
green onions, cilantro and pumpkin seeds.
