Grand Canyon Chili

Grand Canyon Chili 2 lb. round steak, cubed 2 TB vegetable oil 1 large red onion, diced 1 tsp. salt 1 tsp. chili powder 1 cup water 1 tsp. dried oregano 1 tsp. ground cumin 1 can (16 oz.) stewed tomatoes, undrained 1 clove garlic, minced 1 tsp. ground black pepper 2 cans (16 oz. ea.) red kidney beans, drained In a large pot, brown meat in the oil. Add the rest of the ingredients except beans. Cover the pot and bring to a boil. Reduce heat and simmer for 45 minutes, stirring occasionally. Skim off fat and add beans. Simmer for an additional 30 minutes. Serving suggestion: Cornbread is perfect with this dish! Serves 6.
