Idle Isle Candy

 

1/2 c. brown sugar

2 1/2 granulated sugar

1/3 heavy cream

1/4 c. white karo syrup

2  c. almonds, chopped and toasted

 

Combine the first 4 ingredients in a heavy, buttered pan.  Bring to a boil; take off heat.  put lid on and let set for 1 minute. take off lid.  let cook (without stirring) to 232º (to get the brown color, try to cook it one notch above 232º mark on your thermometer).  Let cool Spoon out of pan without touching sides then knead and roll into balls.  dip the balls into slightly melted chocolate, then roll in chopped toasted almonds.  Store in cool place.
