Maple Walnut Cake
1 spice cake mix (18.25 oz)
1 box instant pudding (3.4 oz)
4 eggs
3/4 cup water
1/3 cup vegetable or canola oil
3/4 cup sour cream
1 1/2 cups chopped walnuts
3 T. maple syrup, or 1 1/2 T. maple flavoring
Simple syrup
Preheat oven to 350. Butter two 8" cake pans and dust lightly with flour. Using a mixer, combine cake mix, pudding, eggs, water, oil and sour cream. Stir in the nuts and maple syrup. Pour batter into prepared cake pans and bake 25 minutes or until the cake tests done. Remove layers from oven and cool them by placing the pans on slightly damp tea towel. Spray or brush the layers with simple syrup before decorating.
Hint: The cake is delicious baked in a 9 x 13" pan and dusted lightly with powdered sugar.
To make simple syrup, combine 1 cup sugar and 1 cup water in pan. Bring to a boil. Boil 2 minutes. Let cool.
