Vegetable Spoon Bread
 
  2                     eggs -- slightly beaten
  1       10 ounce package  frozen chopped spinach -- thawed
  1       8 3/4 ounce can  cream-style corn
  1                cup  sour cream
     1/2           cup  melted butter
  1                cup  chopped ham -- optional
  1       8 1/2 ounce package  corn muffin mix
     1/2           cup  shredded process cheese
 
Mix eggs, spinach, corn, sour cream, butter and ham. Stir in corn muffin mix. Bake in greased 9-inch pan at 350 degrees for 35 to 40 minutes. Sprinkle with cheese. Bake for 2 minutes longer or until cheese melts. May substitute broccoli or cauliflower.
