New Fashioned Oatmeal Bread

1 1/3 C milk
1 1/4 tsp salt
3 Tbsp packed brown sugar
2 Tbsp shortening
1 C whole wheat flour
2 C bread flour
1/2 C quick cooking oats (see note)
1/4 C oat bran
1 1/2 tsp yeast

Measure ingredients into baking pan in order recommended by the
manufacturer.
Select dough cycle.

Remove dough to a lightly floured surface, cover with a bowl and let
rest for 10 to
15 minutes.

Form the dough into a loaf 10 x 3 inches with a slightly flattened top.
Place on a
lightly greased baking sheet, cover and let rise for 30 to 45 minutes or
until double
in volume.

Bake at 375 degrees F. for 35 to 40 minutes or until loaf sounds hollow
when tapped
on the bottom.

The Granary touch: Gently brush the risen loaf with milk or water.
Sprinkle large flake
oatmeal on the top of the loaf before baking. It will toast to a nutty
sweetness.

Variation: Toasting the oats will give a nuttier flavor. Spread in a
shallow pan. Bake
at 350 degrees F. for 10 to 15 minutes or until brown.

NOTE: Use a small or medium flake oatmeal but not the instant cooking
variety.
