1 bag (8 oz.) saffron flavored yellow rice mix
2 to 3 cups chopped cooked turkey
1 cup fresh tomato, chopped
1 cup broccoli florets OR
1 cup frozen baby sweet peas, thawed
1 medium red or yellow bell pepper, chopped
1/3 cup dried cranberries OR golden raisins
1/4 cup scallions, thinly sliced
2 oz. prosciutto, cut into thin strips, crisp cooked* OR
2 oz. cooked ham cut into thins strips
3/4 cup bottled vinaigrette salad dressing
1/3 cup almonds, sliced and toasted
2 TB fresh basil, chopped OR tiny fresh basil leaves
Prepare rice according to package directions. Spread on baking sheet. Cover, and
refrigerate for 20 minutes or until cooled.
In an extra large bowl combine, turkey, tomato, broccoli, bell pepper, cranberries,
onions and prosciutto.
Add rice and dressing; toss to coat.
Cover and refrigerate for 2 to 24 hours.
Sprinkle with almonds and basil.
