Tex Mex Turkey Burgers and Zucchini Salad
2 tablespoons vegetable oil
3 medium zucchini and/or yellow squash, halved lengthwise and thinly sliced crosswise
1/2 medium red onion, finely chopped
3 tablespoons fresh lime juice
2 pounds ground turkey
2 teaspoons chili powder
4 ounces pepper jack cheese, thinly sliced
4 thick slices artisan sourdough bread, halved
1 avocado, halved, pitted, peeled and thinly sliced salsa, optional for topping
Heat grill to medium-high and lightly oil grates. In medium bowl, combine zucchini, onion, lime juice, and oil. Season with salt and pepper. Let zucchini marinate at room temperature for 15 minutes.
Form ground turkey into four patties. Using thumb, make an indentation to give burgers a flat top surface for holding toppings later. Sprinkle with chili powder and season with salt and pepper.
Cover and grill until done to your liking, approximately 5 minutes per side.
Top burgers with cheese. Cover and continue to grill until cheese has melted. Grill bread until lightly charred. Place each burger on piece of bread and top with avocado slices and salsa. Serve burgers with zucchini salad.
