TURKEY
1 whole turkey breast on the bone, 7 pounds
2 tbs lemon juice
2 tbs olive oil
2 1/2 tbs Holiday Spice Rub
HOLIDAY SPICE RUB
4 tsp onion salt
2 tsp each dried oregano, garlic powder, paprika, pepper, and dried sage
1 tsp dried thyme
1/2 tsp ground allspice
In a bowl, blend all ingredients. Store in a tightly covered jar up to 3 months.
GRAVY
3/4 cup white wine
3 tbs flour
3 cups chicken broth
Heat oven to 350 degrees. Coat roasting pan with cooking spray. TURKEY---Rinse turkey breast under cold
water, pat dry. Rub on all sides with lemon juice and oil. Rub Holiday Spice Rub on turkey, including under
skin. Roast 2 hours or until done. Let stand 15 min. in a warm place. GRAVY---Pour off all but 2 tbs of the
drippings from pan. Add wine and cook, scraping up any browned bits from bottom of pan. Cook 1 min.
Sprinkle flour into pan, cook 1 min. Whisk in chicken broth and cook until thickened. Strain gravy into gravy
boat. TO SERVE---SLICE TURKEY AND ACCOMPANY WITH THE WARM GRAVY.
