Turkey Waldorf Sandwich

2 cups plain natural yogurt 1/2 cup finely chopped celery 1/2 cup finely chopped toasted walnuts 3 tbs golden raisins 1 tbs brown sugar 24 slices sourdough bread 12 slices smoked turkey (24 oz) 2 small apples diced 12 leaves of leafy greens In a bowl combine yogurt, celery, walnuts, raisins, and sugar. Mix well. Cover and refrigerate at least 2 hours. Lay 12 slices of bread out on a flat surface. Spread each with a scant 1/4 cup yogurt mixture. Top each with a lettuce leaf, 2 ounces sliced turkey, and 3 slices of apple. Top each with remaining bread slices. Cut in half and serve.
