2 lemons, zested and halved
12 pound turkey
2 cloves garlic, chopped
1 tbs chopped sage
3/4 cup apricot preserves
3 green onions, sliced
Heat oven to 425°. Place one lemon in turkey cavity, set in roasting pan. Combine zest, lemon juice, 1 clove garlic, and 2
tsp sage. Rub under skin of breast and over outside. Roast turkey 20 min. Reduce heat to 325° roast 1 1/2 hours more.
In bowl, combine remaining ingredients, spread over turkey, roast 30 min. more or until done. Let sit 15 min.
