Turkey Burritos

2 1/4 cups shredded roasted turkey 15 oz can black beans 1 cup roasted corn kernels 1/2 cup green salsa 1/3 cup each sliced scallions and chopped cilantro 8 yellow bell pepper halves, roasted 4 flour tortillas 1 cup shredded Monterey Jack cheese Toss turkey, beans, corn, salsa, scallions and cilantro in a bowl to mix well. FOR EACH BURRITO---Arrange 2 halves bell peppers down center of a tortilla. Spoon on 1/4 the turkey mixture, then sprinkle with 1/4 the cheese. Fold 4 sides to center, overlapping, like an envelope. Wrap each in a slightly dampened paper towel. Place seam side down in a microwave dish. Microwave on high to melt cheese, about 4 min. SERVE WITH GREEN OR RED SALSA AND SOUR CREAM.*
