Favorite Baked Beans

2 cups dried beans
1 onion -- chopped
1/4 pound salt pork
1/2 cup molasses
1 teaspoon salt
1 teaspoon dry mustard
pinch of ginger

Boil beans in 2 quarts water for 2 minutes; remove. Let stand, covered, for 1
hour. Bring to a boil. Simmer, covered, for 1 hour or until tender; drain,
reserving 2 cups liquid. Combine with onion and salt pork in 2 1/2 quart
casserole. Mix reserved liquid with remaining ingredients. Pour over beans.
Bake, covered, at 300 degrees for 5 to 6 hours, adding additional liquid if too
dry.
