Creamy Roquefort Dressing
1/2 cup mayonnaise
1/3 cup crumbled Roquefort cheese
1/4 teasp. crushed garlic (optional)
1 Tbls. light cream, 1/2 and 1/2, or milk
1/2 teasp. Worcestershire sauce
1/8 teasp. salt
Pinch white pepper
Mix mayonnaise, cheese and garlic in a small bowl. The mixture should not
be completely smooth. In other words, there should still be identifiable bits
of cheese in the dressing. Beat in cream, Worcestershire sauce, salt, and
pepper.
Simple wonderful over any kind of greens you like---even iceberg lettuce.
Makes about 1 1/4 cups.
