GRILLED SANDWICHES

2 Tbsp. butter or margarine (soft) 2 Tbsp. crumbled Blue cheese 8 slices Danish rye or pumpernickel bread 1/2 lb. sliced turkey breast 3 oz. salami (preferably Danish), sliced thin 1/4 c. butter or margarine, melted Cream softened butter and Blue cheese until well blended. Spread evenly on each slice bread. Layer turkey, then salami on 4 slices. Top with remaining bread, butter-cheese side down. Brush both sides of sandwiches with melted butter. Broil in preheated oven or on outdoor grill in oiled hinged basket grill, 8 to 10-inches from heat source until browned and filling is hot, 8 to 10 minutes, turning once. Makes 4 servings. Good with salad of cooked, sliced or shredded celeriac marinated in lemon juice, oil, salt and pepper.
