Red Pepper Corn Salsa
2 tablespoons fresh lime or lemon juice
1 tablespoon extra-virgin olive oil
1 tablespoon minced jalapeño pepper, or to taste
2 cloves garlic, minced
Salt and freshly ground pepper to taste
1 cup diced red bell pepper
1 cup frozen corn, thawed, or fresh corn, boiled or grilled and cut from
the cob
2 green onions (both white and green parts), coarsely chopped
2 tablespoons minced fresh cilantro or basil
Stir together the lime or lemon juice, oil, jalapeño pepper, garlic
salt, and pepper in a medium bowl. Add the remaining ingredients; toss.
Taste and adjust the seasoning. Serve chilled or at room temperature.
