Black Bean and Corn Salsa
1 11-oz. can yellow corn, drained
1 15-oz. can black beans, rinsed and drained
1 cup fresh plum tomatoes, chopped
One half cup sweet onion, chopped
One quarter cup fresh cilantro, chopped
Juice of one lime
One quarter cup olive oil
4 oz. Mexican beer
1 tsp. sugar
2 serrano chilies, seeded and chopped
Salt and pepper to taste
Combine all ingredients in a large bowl and serve with tortilla chips.
