Pimiento Cream Dressing
1 canned pimiento
1/2 teaspoon salt
1 tablespoon lemon juice
1/2 cup heavy cream
Rub pimiento through a coarse sieve, add salt and lemon juice and mix
thoroughly. Whip cream and fold in pimiento mixture just before serving.
Makes 1 1/4 cups.
