Caramel Popcorn
12 cups freshly popped popcorn
1 cup blanched slivered almonds
1 cup pecan halves
1 cup cashews
1/2 cup butter or margarine
1 cup firmly packed brown sugar
1/4 cup honey
1 t. vanilla extract
Preheat oven to 350. In a lightly greased 11 x 14" roasting pan, toss popcorn and nuts. Melt butter in a heavy pan. Stir in sugar and honey. Bring to a boil; boil 5 minutes without stirring. Stir in vanilla.Pour syrup over popcorn mixture, stirring until coated. Bake 1 hour, stirring every 15 minutes. Cool completely; break into pieces. Store in an airtight container. Makes about 4 quarts popcorn.Note: Package this crispy treat in cellophane bags tied with raffia for a simple wrapping. Hide the bag in a gift wrapped box for an element of surprise.
