Sweet and Sour Meatballs

1 lb. ground beef
1 cup soft bread crumbs
1 egg, slightly beaten
1/4 tsp. salt
1/4 tsp. ground coriander
2 T prepared horseradish
cornstarch
1/2 cup oil
1 (10 pkg.) frozen brussels sprouts
1 T oil
1 clove garlic, peeled, crushed
1/4 cup onion, chopped
1 small can water chestnuts
1 (15 1/2 oz.) can unsweetened pineapple chunks, drained; reserve 1/2 c.
juice
Sweet and Sour sauce - see below
hot cooked rice

SWEET AND SOUR SAUCE:
1/3 cup sugar
1/3 cup cider vinegar
2 T soy sauce
1/4 cup tomato sauce or ketchup
2 T cornstarch, dissolived in 1/2 cup reserved pineapple juice

Sweet and Sour Sauce: Combine all ingredients in saucepan. Cook over medium
heat, stirring, until sauce is thickened. Remove from heat and set aside.

Steam Brussels sprouts for 5 minutes or until tender.

In large bowl, combine beef with bread crumbs, egg, salt, coriander and
hourseradish. Mix thoroughly. Shape into 8 meatballs. Roll each in
cornstarch. Heat oil in frying pan. Fry meatballs until browned. Remove and
set aside; drain oil from pan. Heat 1 T oil in frying pan. Add garlic and
fry until browned; remove and discard. Add onion and fry for 30 seconds.
Reduce heat. Add Brussels sprouts, meatballs, water chestnuts and pineapple
chunks. Pour in Sweet and Sour Sauce. Stir until heated. Serve over hot
cooked rice. 4 servings.
