Easy Chinese Chicken

1 cup sliced chicken
cooking oil
1 carrot, sliced
2 stalks celery, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 can water chestnuts, drained
2 teas. soy sauce
1 pinch ground ginger
1 teas. cornstarch
3 Tbs. water
4 servings of cooked rice

In skillet, cook chicken in oil, adding vegetables halfway through cooking.
Add soy sauce and ginger and continue to cook. Mix cornstarch with water and add when
chicken is thoroughly cooked. Add more water if necessary. Serve over rice. 4 servings.
