Holiday Spiced Chocolate Walnut Fudge
Ingredients
1/4 cup water
1 cup sugar
1 cup brown sugar
3/4 cup heavy or whipping cream
1/4 cup light corn syrup
1/2 tsp. cream of tartar
pinch salt
7 ounces chopped semisweet chocolate
1 1/2 tbsp. butter
1 tsp. vanilla extract
1/2 tsp. ground cinnamon
pinch ground nutmeg
pinch ground cloves
1 cup chopped walnuts
Directions
Line the inside of an 8 inch square baking dish. Butter the foil.
Combine the water, sugar, brown sugar, cream, corn syrup, cream of
tartar and salt in a large saucepan. Cook, stirring, about 8 minutes
over medium low heat until sugar is dissolved. Remove the pan from
the heat and stir in chocolate. Stir until melted and smooth. Return
the pan to the heat and cook without stirring until the mixture
reaches 238 degrees on a candy thermometer. Remove the pan from the
heat and stir in butter, vanilla, cinnamon, nutmeg and cloves until
combined. Transfer the chocolate mixture to a medium bowl. Place the
bowl in a larger bowl of cold water. Let chocolate mixture cool to
110 degrees without stirring.
Beat the cooled chocolate mixture on low speed, about 15 minutes,
until fudge lightens in color. Stir in chopped nuts until combined.
Transfer the fudge to the prepared dish. Press the fudge into the
dish with buttered fingers. Let the fudge stand about 2 hours until
set. Remove the fudge from the pan using the foil as an aid. Cut
fudge into squares. Store fudge at room temperature in an airtight
container.
Makes about 2 dozen pieces fudge.
