Creamy Potato Fudge

1 med. potato
5-ozs. semi sweet chocolate
1/4 cup butter
1 tsp. vanilla
4 to 5 cups powdered sugar
1/2 cup chopped nuts - walnuts, almonds or pecans

Boil potato until cooked. Peel and mash. Measure 2/3 cup mashed potatoes.
In a saucepan over low
heat OR in microwave proof dish in microwave oven on LOW, melt together
butter and chocolate. Combine with hot potatoes, salt and vanilla. Blend
well.
Stir in sugar until smooth and firm. Mix in nuts. Spread into greased
9x9-in. pan. Cool and cut into squares.
